A home oven tops out somewhere around 250°C. Ours runs at 450°C and bakes a pizza in ninety seconds. That gap is not a matter of impatience — it changes what comes out, and understanding why is the key to getting closer at home.
A race between two things
Every pizza is a race. The base needs to set and brown. The toppings need to heat through without drying out. Whichever finishes first determines what you eat.
At 450°C the base wins easily. The dough hits the stone, the water in its surface flashes to steam, and the crust puffs and colours before the mozzarella has finished melting. Pull it at ninety seconds and you get a crisp, blistered base under toppings that are hot but still recognisably themselves — basil still green, tomato still bright.
At 250°C the race is close, and the toppings tend to win. By the time the base is properly crisp, ten or twelve minutes have passed. The cheese has gone oily and the herbs are brown. The pizza is not bad; it is just a different dish.
The leopard spots
Those dark blisters on the crust edge are the visible signature of a hot oven. They form where a pocket of gas pushes the dough surface hard against the heat for a moment. Browning reactions that need several minutes at 250°C happen in seconds at 450°C — but only at the contact points, which is why the char is spotted rather than even.
An evenly browned crust means the oven was too cool and the pizza was in too long. Uneven is the goal.
The floor matters more than the air
Most of the heat that cooks a pizza comes up through the stone by direct contact, not down from the air. That is why a pizza baked on a tray in a hot oven still comes out pale underneath: the tray is thin, it gives up its heat instantly, and it has nothing left to give.
A thick stone stores a large amount of heat and releases it into the dough steadily. Ours is left to soak for an hour before the first pizza of the day.
Getting closer at home
You will not reach 450°C in a domestic oven, but you can shift the race:
- Preheat a stone or a heavy steel plate for a full hour at maximum, not the twenty minutes the packaging suggests
- Put it on a high shelf, close to the top element, so the top of the pizza gets radiant heat too
- Switch to the grill for the last minute — it browns the top without giving the base more time to dry
- Top lightly. Every extra gram of wet topping is more water the oven has to drive off before anything can brown
Steel beats stone if you are buying: it holds a similar amount of heat but moves it into the dough faster, which is precisely the problem you are trying to solve.
The oven does not wait around. Neither should you — pizza is at its best about a minute after it comes out.
